Nutrition Services for Adults

Nutrition counseling for adults can help you personalize your plate and create a sustainable nutrition approach that fits your individual needs for today and into the future. Our team of registered dietitian nutritionists is dedicated to helping you improve your health through evidence-based nutrition education and counseling.

Medical nutrition therapy (MNT) is an essential component of comprehensive health care. Individuals with a variety of conditions and illnesses can improve their health and quality of life through medical nutrition therapy. During an MNT intervention, dietitians counsel clients on behavioral and lifestyle changes required to impact long-term eating habits and health. Medical nutrition therapy includes:

  • A comprehensive nutrition assessment determining the nutrition diagnosis.
  • Nutrition intervention planning and implementation using evidence-based nutrition practice guidelines.
  • Monitoring and evaluation of an individual's progress over subsequent visits.

    Biography

    Calli M. Bishop, RD, LD is an inpatient adult dietitian at St. Luke’s Rehabilitation Hospital. She has worked with patients in eating disorder recovery and various adult conditions including cardiac and weight loss. She is passionate about healthy food, its role in the body and the joy and vitality it can bring to life. 

    Calli earned her bachelor's degrees in nutrition and food science and interdisciplinary studies with a minor in biology from Utah State University. In her free time she enjoys camping, hiking, river rafting, rock climbing, skiing and exploring new places with her family. She loves to cook and bake, play volleyball, basketball, lift weights, and watch her children grow.

    Biography

    Teresa Brennan, RDN, LD, CNSC provides individualized nutrition therapy tailored to meet specific nutrient needs, diagnoses, lifestyles, and goals. She specializes in wellness, education, nutrition support (enteral and parenteral), weight loss and weight management, gut health/gastrointestinal diseases, and preventive health.

    Biography

    Emmalee Calvert, RD enjoys helping patients in both inpatient hospital and home health settings accomplish their health goals through personalized nutrition choices. She has interests in reducing food insecurity and in helping people with diabetes manage their symptoms through nutrition.

    Emmalee graduated with her bachelor’s degree in dietetics from Lamar University and completed her dietetic internship and master’s degree at Montana State University. When she’s not helping others make progress towards a healthier lifestyle, she enjoys weightlifting, spending time outdoors, or trying a new recipe in the kitchen.

    Biography

    Olivia Cox, RD, LD is an outpatient dietitian, specializing in adult eating disorders and disordered eating. She is passionate about improving patients’ relationship with food and building their confidence to make sustainable lifestyle changes to improve their health outcomes and quality of life.

    Olivia earned her bachelor’s degree in nutrition and dietetics from Idaho State University and completed her dietetic internship through Utah State University.

    Biography

    Erica DeWeber, RD is a certified nutrition support clinician and enjoys empowering patients to promote health through nutrition. She also has experience with inpatient and outpatient care helping people better manage various acute and chronic diseases.

    Erica earned both her bachelor's degree in dietetics and her master's degree in nutrition and wellness from Andrews University. When not at work, Erica can be found listening to an audiobook while walking her two doodles.

    Bethany Ericson, RD has experience working in both inpatient and outpatient settings. She enjoys working with her patients on their personal nutrition goals while providing the nutrition education to help them be successful. She is passionate about intuitive eating and helping those with dysfunctional eating behaviors make peace with food. 

    Bethany received her bachelor’s degree from Idaho State University and completed her internship through ISU-Meridian in the Treasure Valley. In her free time, you will find her reading, spending time with her family, or taking dance classes.

    Biography

    Linda J. Kees, RDN, LD, CNSC is a dietitian and nutritionist specializing in wellness, FODMAP diets and "gut" nutrition, sports nutrition, weight loss, vegan and vegetarian diets, Mediterranean lifestyle, and nutrition support (tube feeding and IV nutrition). She enjoys personalizing nutrition education and is passionate about improving the mind, body, and spirit through healthy nutrition.

    Linda has a wide range of experience, including private practice, home infusion, ICU, working with WAMI and graduate students in nutrition, and midwifery clinics. She also worked to create a menu cycle and recipe creation and testing for Idaho State Patrol cadets to prevent weight loss. She earned her FODMAP dietitian certification from Monash University.

    Linda has several published articles and abstracts including poster presentations of two ASPEN abstracts re: “Incidence of Nutritional Complications after Bariatric Surgery” 2013 and “Reducing Aluminum Content in TPN solutions” 2014 (co-author).

    She also presented a poster session of an abstract, at the 1993 annual meeting of the Academy of Nutrition and Dietetics re: “Knowledge Retention and Diabetes Education”. Additional articles include U.S.M.S. Swimmer Magazine, Nov. 2007 and Light & Tasty Magazine, Jan 2005.

    Biography

    Kimberly Landsberg, MS, RDN, CSOWM, LD provides individual therapy to patients with heart failure to manage symptoms, prevent hospitalizations and improve quality of life. She specializes in promoting heart health, wellness, and weight management tailored to meet specific nutrient needs, diagnoses, lifestyles, and goals. 

    Kim is a registered dietitian/nutritionist, with a master's degree in nutrition and dietetics. She is a board certified specialist in obesity and weight management.

    Biography

    Jill Leiser, RD enjoys helping patients in the inpatient hospital and rehabilitation settings get the proper nutrition to heal. She enjoys learning about and educating patients on the importance of adequate calories and protein in order to enhance healing and recovery from illness. She has a special interest in GI disorders and nutrition support. She is currently a member of the American Society for Parenteral and Enteral Nutrition (ASPEN).

    Jill graduated with her bachelor’s degree in dietetics from Idaho State University. She has worked at hospitals in Washington, Utah, and Idaho and has experience working with both adults and children. In addition to her passion for helping others improve their health through nutrition, Jill enjoys decorating for every holiday, doing puzzles, skiing with her daughter, and exploring the outdoors with her family.

    Abbie Mallory, MS, RD has experience in both the inpatient and outpatient care setting. Abbie specializes in nutrition for promoting heart health, preventing diabetes and eating disorders. Abbie is passionate about helping people find the foods that best fuel their bodies and improving their relationship with food.

    Abbie earned her bachelor’s degree in environmental studies from Bates College. Abbie took her undergraduate dietetic courses through University of Northern Colorado, and completed her dietetic internship and master's degree in nutrition from Idaho State University.

    Kally Mohlke, RD, LD, CSOWM provides individual nutrition therapy to patients to meet their specific nutrient needs based on their diagnoses, lifestyle, and goals. She has experience in both inpatient and outpatient settings. Kally’s passion is educating clients about improving health through nutrition and lifestyle changes. She has a special interest in plant-based eating and concentrating on the prevention and management of chronic diseases and optimizing health.

    Kally was born and raised in Boise and earned her bachelor’s degree in nutrition and dietetics from the University of Idaho. She is a board certified specialist in obesity and weight management. In addition to her passion for nutrition she also enjoys snowboarding, hiking, reading, and spending time with her husband and dogs.

    Biography

    Sherri Nelson RDN, LD is a clinical dietitian and manager, overseeing the Meridian, Nampa, Eagle, and Fruitland sites. Sherri specializes in wellness, education, nutrition support and preventive health. 

    Sherri’s experience includes inpatient and outpatient clinical settings, home infusion, ICU, cardiac, renal, and hospice care. She has been instrumental in credentialing the dietitians at St. Luke’s and assisting in writing up their competencies. She helped develop the clinical nutrition department, as well as increasing the number outpatient dietitians to better serve our population. She manages resources in a cost-effective manner and participates in compliance and performance improvement efforts to ensure that nutrition care is safe and effective.

    Sherri graduated from the University of Idaho with a bachelor’s degree in food and consumer sciences. Sherri enjoys traveling, her family, her dogs and loves running in the foothills.

    Biography

    Josie Read, RD specializes in outpatient medical nutrition therapy for lifestyle medicine. She also teaches a number of community nutrition education courses, including healthy cooking classes, and is a facilitator of CHIP (Complete Health Improvement Program). She has a special interest in plant-based eating to prevent chronic diseases and optimize overall health.

    Josie earned her bachelor's degree from the University of Idaho. In addition to her passions for nutrition and cooking, Josie enjoys spending time outside mountain biking and running.

    Biography

    Chelsea Schoenfelder, MH, RD, LD is a registered dietitian specializing in lifestyle medicine, cardiovascular health, and diabetes management. She is also a facilitator for Pivio (a healthy approach to optimal lifestyle), and has a passion for helping patients make sustainable changes to their eating patterns to improve their overall health.

    Chelsea earned her first bachelor’s degree in nutrition from the University of Idaho. She went on to earn a second bachelor’s in dietetics and a master's degree in public health both from Idaho State University. Chelsea was born and raised in Idaho and enjoys the outdoors, camping, hiking, and running.

    Anna P. Shaw, RD is an inpatient adult dietitian at St. Luke’s Medical Center. She is passionate about nutrition education and intuitive eating principles.

    Anna earned her bachelor's degree from the University of Idaho. Throughout college, Anna worked as a wildland firefighter and participated in undergraduate research related to wildland firefighter nutrition education. She enjoys spending her free time outside and also loves to bake and travel.

    Melissa Sleight, RDN is a board-certified lifestyle medicine dietitian with experience in multiple areas. She has a passion for educating clients about improving health and reversing disease through nutrition and lifestyle changes. She loves seeing her clients motivated to improve their health each day.

    Melissa is a diplomate of the American College of Lifestyle Medicine. She earned her bachelor's degree in nutrition and food science from Utah State University and is a member of the Sports, Cardiovascular, and Wellness Nutrition Group as part of the Academy of Nutrition and Dietetics. She is also involved at the local level as a president-elect of Magic Valley Dietitians and a board member of Idaho Academy of Nutrition and Dietetics as a liaison for her region.

    Melissa is a facilitator of CHIP (Complete Health Improvement Program) and teaches healthy cooking classes. In addition to nutrition and cooking, Melissa is a lover of old houses and spending time outdoors, exploring with her family.

    Biography

    Danielle Wagner, RDN, LDN is a registered dietitian with a passion for educating patients, providing tube feedings, and total parental nutrition. She helps with Cooking Matters to educate people on basic nutrition and how to make healthier choices. She is also a member of the Idaho Academy of Nutrition and Dietetics.

    Danielle earned her bachelor's degree in nutrition and dietetics from Idaho State University.

    Biography

    Carol Ward, RDN, LD currently works as a clinical dietitian in both acute and long term care, primarily at St. Luke’s Elmore. She has diverse experience in multiple facilities, working in critical care, neurology, enteral and parenteral nutrition, rehab, and management. Carol is a member of ASPEN and was a certified nutrition support clinician, and has always had a special interest in gastroenterology.

    Carol earned her bachelor’s and master’s degrees at California State University Long Beach. In her free time, Carol loves hiking with her dog and exploring native flora. Her favorite indoor activity is working on family genealogy.
